Blue Cheese is full fat cheeses with distinctive flavours, mottled with veins of greenish-blue mould. Varieties include Danish Blue, Roquefort, Stilton and Blue Cheshire.
Blue Cheese are an excellent source of protein, vitamin B12 and abundant in calcium, but high in saturated fat.
Health benefits
Cheese provides high quality protein, especially important for vegetarians, and readily available calcium protects the health of bones. Vitamin B12 has many important functions and cheese provides a valuable supply.
They are usually sliced and eaten with savoury biscuits or bread but also may be used in cooked dishes.
Disadvantages: extremely high in saturated fat (about 35 percent of total content) so should be eaten sparingly. Blue cheeses may cause allergies, e.g. eczema and migraine, in susceptible people.
