Good King Henry, Chenopodium bonus-henricus (also known as Poor-man's Asparagus, Linconshire Spinach and Mercury) is a perrenial plant and a member of the Amaranthaceae (amaranth) family which grows to some 80cm high.

Good King Henry a herbaceous, meadow plant belonging to the goose-foot family, which grows wild in the British Isles.

It is a good source of soluble and in soluble fibre, vitamins(especially C and B1) and minerals (iron and calcium).

Health benefits
It provides soluble fibres which helps to lower blood cholesterol levels and may protect against heart and circulatory disease. Insoluble fibre promotes healthy bowel function and may help to protect against diseases of the digestive system, including cancer. It provides vitamins and minerals that are involved in essentials metabolic functions and in maintenance of the health tissues and organs. Vitamin C has anti-infective and antioxidant properties and is believed to protect against certain diseases and infections.

Cooking/serving methods: green leaves can be lightly boiled or steamed and eaten as a vegetable resembling spinach.
