
Artichokes an unusual, oval-shaped vegetable on a stalk, that is, in fact, the flower head of the plant, and which consists of a series of stiff, overlapping leaves. The leaf bases and pinkish heart are the parts that are eaten. Globe artichokes are usually imported from Mediterranean countries.
Artichokes is an excellent source of vitamins, especially floate (B9 or folic acid) minerals, (particularly potassium) and fibre.
Artichokes contain a substance known as cynarin, along with other compounds that are believed to have healing properties. They may help to lower blood cholesterol, boost liver function and support the gall bladder in the treatment and prevention of gallstone. Artichokes and extracts containing cynarin are used in herbal medicine to treat these disorders.
The vegetable's content of vitamins, minerals, carbohydrate and fibre all have health-enhancing properties.
The tops of the leaves should be trimmed before cooking. Artichokes are usually boiled or steamed whole and the cooked leaf bases and heart are stripped off and dipped in sauce.
Disadvantages: can be 'fiddly' to eat as some parts are discarded.
